Makes 16 Servings
Ingredients
- 3 cups vanilla wafer crumbs
- 4 Tbsp. light margarine, melted
- Artificial sweetener to equal 3 Tbsp. sugar
- 1 env. Unflavored gelatin
- 1 cup skim milk
- 2 ½ pkg. (8 oz) fat-free cream cheese, softened
- 2 Tbsp. lemon juice
- 1 Tbsp. grated lemon peel
- 2 tsp. vanilla extract, Artificial sweetener to equal 1/3 cup sugar
- 3 cups fresh fruit (Strawberries, kiwi, peaches, etc...)
Directions
Mix crumbs, margarine, and sweetener in bowl; pat evenly on bottom of baking pan (15x10 inches). Sprinkle gelatin over milk in small saucepan; let stand 2 to 3 minutes. Heat over medium low heat until gelatin is dissolved. Cool to room temperature.
Beat cream cheese until fluffy in large bowl; gradually beat in milk mixture. Beat in lemon juice, lemon zest, vanilla, and remainder of sweetener. Pour mixture over crust; refrigerate for 3 hours until set. Before serving, garnish with combination of colorful fresh fruit.
